MLF RESCUE USING MALOCONTROL BIO

puzzle

PROBLEM

Malolactic fermentation (MLF) can frequently stall or fail entirely in wines containing specific inhibitory substances. These include:

  • Medium-chain fatty acids (C8, C10, C12) from yeast metabolism.
  • Pesticide residues, particularly from conventional viticulture.
  • Unfavourable conditions like low pH or high alcohol levels, which inhibit Oenococcus oeni adaptation. Such conditions can lead to MLF initiation failures, prolonged lag phases, or even bacterial cell death, increasing spoilage risks, volatile acidity, and bottling delays.

SOLUTION

The solution proposed is MaloControl BIO, a certified organic and allergen-free MLF nutrient.

  • It contains a blend of yeast cell walls, amino acids, minerals, and sterols.
  • MaloControl BIO binds fatty acid inhibitors, thereby improving bacterial viability.
  • It promotes fast adaptation and clean malic acid degradation, rescuing stalled MLF.

PROTOCOL OBJECTIVES

The primary objectives of using this protocol are to:

  • Detoxify the wine matrix prior to MLF inoculation.
Improve the survival and efficacy of MLF starter cultures.
  • Prevent spoilage that can arise from incomplete or failed MLF.
