Description

The multifunctional product ViniFix™, is a fining agent based on yeast cell walls. In addition to the use of standard yeast cell walls, ViniFix™ has a wide range of applications for various wine defects. The harmonised components activated charcoal, ascorbic acid, bentonite, chitosan, copper citrate and tannins combine perfectly and restore the wine’s freshness and fruitiness.

ViniFix™ helps to reduce unpleasant aromas that can arise during winemaking. This includes the gentle removal of off- flavours such as mercaptans, indole and thiol esters. The use of copper can be minimised during the H2S treatment.

Impurities such as spray agent residues can be reduced to support a desired MLF.

Absorption or removal of volatile phenols such as:

  • 4-EG (ethylguaiacol)
  • 4-EP (ethylphenol) Brettanomyces/Dekkera (horse sweat notes)
  • 4-MP (methylphenol), cresols (smoke taint)
  • Tri-bromo and tri-chloroanisole (cork tones)

Multifunctional Product ViniFix™ Properties

ViniFix™ can be used in a variety of ways, e.g. to eliminate taste and odour defects of various origins.

  • Removes unwanted flavours from must or young wine.
  • Reduction of volatile phenols (Brettanomyces) and cork off-flavours.
  • Reduces or eliminates sulphur-related off-flavours from the young wine.
  • Improves the sensory and mouthfeel of wines.

Functionality

ViniFix™ has multiple properties due to its particularly high lipid content, which are highly beneficial for modern winemaking and can contribute to improving mouthfeel.

The multifunctional product ViniFix™ is a treatment agent with copper compounds for all types of off-flavours containing sulphur. Active components such as ascorbic acid, bentonite, activated carbon and chitosan in suspension help for a better removemal of the sulphur compounds bound to copper ions. In addition, other organic off-flavours are also bound and the bouquet and mouthfeel of the wine are supported. The wines are fined in the process without removing any ingredients that add sensory value. The wines retain their fruitiness without accelerated ageing.

ViniFix™ can therefore reduce a variety of off-flavours, e.g. Brettanomyces tones and H2S. ViniFix™ is a multi-faceted all-rounder – naturally in certified organic quality.
